ZUCCHINI & TOMATO BAKE 
1 tsp. olive oil
4 zucchini, sliced
4 fresh med. tomatoes, sliced thin
1 lg. onion, sliced thin
1 tsp. paprika
2 tbsp. dried or fresh basil
1/4 c. Parmesan cheese
Salt & pepper to taste
1/2 - 1 whole pack of crackers, crushed fine

Put olive oil in bottom of casserole dish. Put half of the zucchini on bottom of dish. Put tomatoes and onions on top. Sprinkle with the paprika, salt and pepper and basil. Put the rest of the zucchini on top. Sprinkle with Parmesan cheese. Put crushed crackers on top. Bake in a 350 degree oven until crackers are golden brown. 6 to 8 servings.
