CATHY'S CANDIED YAMS 
2 or 3 large cans yams
ground cinnamon
ground nutmeg
1 can crushed pineapple
light brown sugar
1/2 cup orange juice
butter
marshmallows
chopped pecans (optional)

Place yams in large baking dish and cut into bite size pieces, Generously sprinkle with cinnamon. Lightly sprinkle nutmeg. Pour lightly drained pineapple on yams. Sprinkle generously with brown sugar. Pour orange juice over yams. Add several large pats of butter. Sprinkle pecans over top, if desired. Completely cover yams with marshmallows. Lightly cover with foil coated with cooking spray. Bake at 350°F for 35 to 40 minutes, uncover last 10 minutes. (Enjoy!)
