TURKEY CROQUETTES 
2 tbsp. butter
1 tbsp. chopped onion
4 tbsp. flour
1 c. milk or turkey broth
Salt and pepper
2 c. cooked chopped turkey

Heat butter, add onion. Cook until soft and lightly browned; add flour and stir until blended; slowly add liquid and stir over low heat until thick and smooth.

Season to taste add turkey. Chill thoroughly. Shape into croquettes. Dip in egg and crumbs and fry in deep fat 375 to 385 degrees 3 to 5 minutes or until browned. Drain on absorbent paper.
