ARTICHOKE FRITTATA 
4 eggs, lightly beaten with fork
6 soda crackers, crumbled
1 1/2 c. sharp Cheddar cheese, shredded
2 sm. jars of marinated artichokes, chopped
1 bunch green onions, chopped
Chopped parsley (sm. amount)
Salt & pepper to taste
Dash of Tabasco, Worcestershire & oregano

Fry onions in olive oil drained from 1 jar of artichokes. Discard oil for second jar. Mix all ingredients until well blended. Place in 8 inch oiled pan. Bake at 325 degrees or 35-40 minutes. Cool and cut in squares. May be made ahead and frozen. Excellent hot or cold.
