FRITTATA SCICILIANO 
EGG MIX:

3 whole eggs
1 tbsp. Parmesan cheese
1/2 tsp. Italian seasoning
1/4 tsp. granulated garlic
Fresh milled black pepper

FILLING:

Zucchini, 1/2" sliced & quartered
2 tbsp. chopped onion
2 tbsp. chopped green peppers
2 sliced white mushrooms
1/4 lb. cooked sweet Italian sausage, sliced in coins
4 slices pepperoni

In small bowl, beat the egg mix ingredients with small whip until blended.

In omelette pan melt a little butter and brown the filling ingredients. Pour egg mix in pan and on low heat, let set for 1 minute. Place entire pan in 350 degree preheated oven for 15 minutes or until golden brown. Remove and top with cheese and pepperoni; sprinkle with Italian seasoning. Place in oven until cheese melts. Turn onto plate and serve with garlic toast.
