LUTIE HALL'S CHOCOLATE POUND
CAKE
 
1/2 lb. butter, plus 1 tbsp. Crisco
3 c. sugar
5 eggs
1 1/4 c. regular homogenized milk
1 tbsp. vanilla
3 c. Swansdown cake flour
Heaping 1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. cocoa

Cream butter, shortening, and sugar. Add eggs, one at a time. Sift dry ingredients together and add alternately with milk.

Important: in the last beating, add 1 tablespoon cold water, this helps texture. Grease and flour pan. Bake in tube pan at 325 degrees one hour and 15 minutes. Test with straw to make sure it is done. This makes a large cake; you may have enough batter left over to make a small cake (4 x 2 round). NOTE: Begin and end beating with dry ingredients.
