ARTICHOKE RICE SALAD 
1 (6 or 7 oz.) pkg. chicken flavored rice mix
2 green onions, thinly sliced
1/2 green pepper, seeded & chopped (optional)
8 pimiento stuffed green olives, sliced
2 (6 oz.) jars marinated artichoke hearts
1/4 - 1/2 tsp. curry powder
1/3 c. mayonnaise
Romaine or butter lettuce
Pimiento or tomato wedges for garnish

Cook rice as directed on package except omit butter. Remove from heat; turn into bowl and cool. Add onion, pepper and olives to rice.

Drain artichoke hearts, reserving marinade. Combine marinade with curry powder and mayonnaise. Mix until blended. Add dressing to rice mixture along with artichoke hearts. Mix lightly; cover and refrigerate until well chilled.

Line serving plate or bowl with lettuce; mound rice and garnish. Serves 6 to 8.
