SILESIAN POTATO SALAD | |
The German Name for this Salad is "Schlesischer Kartoffelsalat". My mother never gave me the exact measurements (I guess she didn't need any after all these years but you can eyeball the proportions as she did and still does). bologna (any kind: chicken, turkey, beef) boiled whole potatoes, peeled onions, any color pickles (I use regular Kosher) apples (tart ones, like Granny Smith) real mayonnaise salt and pepper, to taste Note: I use bulk bologna, it's easier to cut and dice, but if you prefer you can use thick sliced bologna and just cut the other things finer. Use "salad potatoes", the ones that are firm after boiling, not baking potatoes. Cut and dice the first 5 ingredients the same size. Put in a bowl. Mix mayonnaise with salt and pepper, to taste. Stir mayonnaise into the rest of the ingredients and let rest a couple of hours or overnight in refrigerator. Before serving, stir and if too thick add a little milk to the salad and reseason to taste. Guten Appetit! Submitted by: Gina |
