BACK HOME APPLE PIE 
4 lg. tart apples
1/2 c. orange juice
1/2 c. sugar
Pinch of salt
Pastry for 9" pie (double crust)
1 egg white, beaten
3 tbsp. sugar
1/3 c. sugar
1 stick butter

Peel and slice apples. Cook with orange juice, 1/2 cup sugar and salt until tender; cool. Line pie pan with pastry. Brush unbaked pie shell with beaten egg white, then sprinkle generously with 1/2 of the 3 tablespoons sugar. Add 1/3 cup more sugar to the cooled apple mixture and put into pastry shell. Cut butter into small pieces and dot over top of apples. Cut very narrow strips from rolled out pastry and twist to make latticed top on pie. Brush with remainder of egg white and sprinkle with sugar.

Bake at 325 degrees for 30 minutes on bottom rack of oven. Then move to center of oven and bake 30 minutes longer. Delicious served warm or cool, with or without vanilla ice cream.
