2 c. unsalted melted butter 1 1/2 tbsp. sweet paprika 3 tsp. salt 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. cayenne pepper 1/2 tsp. white pepper 1 tsp. black pepper 1/2 tsp. oregano 1/2 tsp. thyme Fish fillets Heat cast-iron skillet over high heat until ash appears on bottom. You can't get it too hot. Pour melted butter in a dish. Combine dry ingredients in a dish. Dip fillets in melted butter coating well. Cover fillets with dry mix, pressing it on fillets with hands. Place fillets in hot skillet and pour about 1 teaspoon butter on top of each. Cook, uncovered, over high heat until underside is charred. Time will vary according to thickness of fillet and heat of skillet. Turn fillets and pour about 1 teaspoon of butter on top of each. Cook until done. Serve hot with melted butter. This should be cooked outdoors due to the smoke it causes. 6 servings. |
