GARDEN FRESH EGGPLANT 
2 tbsp. peanut oil
2 garlic, peeled, diced
2 onion, peeled, chopped
1 tbsp. ginger, fresh, peeled and diced
3 lg. sweet green peppers, diced
3 sm. eggplant, diced
3 lg. tomatoes, peeled and diced
Salt and pepper to taste
Hot pepper paste
Fresh basil
Fresh parsley

Heat peanut oil in large frying pan or wok. Add garlic, onion, ginger, and fry 1 minute. Add peppers, fry 2 minutes. Add eggplant and extra olive oil as needed. Add diced tomatoes.

Fry until eggplant is tender, stirring frequently, about 5 minutes. Reduce heat, simmer 10 minutes and add salt, pepper, hot pepper paste and herbs. Let it sit for a few minutes before serving.
