ORANGE SLICE CAKE WITH GLAZE
I make this every Christmas!

3 1/2 cups all-purpose flour, divided
1 cup (2 sticks) butter
2 cups sugar
4 eggs
1 tsp. baking soda
1/2 tsp. salt
1 cup coconut flakes
1/2 cup buttermilk
1 lb. orange slice candy, cut up
1/2 lb. dates, chopped
2 cups chopped nuts (I use pecans, but walnuts are good too)

Mix 1 1/2 cups of the flour with orange candy, fruit and nuts. Set aside.

Cream butter and sugar, beat in eggs one at a time. Mix baking soda, salt, coconut and remaining 2 cups flour; add to creamed mixture with buttermilk, add orange candy, fruit and nuts.

Bake in 250°F oven, in well greased, large loaf pan, or two smaller ones, for 2 1/2 hours. Turn out immediately and glaze.

ORANGE GLAZE:

2 cups confectioners' sugar
1 can frozen orange juice concentrate

In small saucepan, combine confectioners' sugar and orange juice. Cook until sugar is dissolved. Spoon glaze over warm cake.
