SAM'S BACON AND CHEESE 
4 slices bacon, cut into 1/2-inch pieces
3 garlic cloves, chopped
1 tomato, chopped
3 green onions, chopped
1/3 cup grated cheddar cheese (for sprinkling)

Cut bacon in to half-inch pieces, and chop garlic into small pieces. Place in small pan on medium heat and let simmer until the bacon becomes cooked around the edges. Chop up the tomato and the onion into small bite size pieces and add to pan. Stir often and cook until bacon is done. Then put it on a plate, and sprinkle cheese over. You can put in cheese fondue for added flavor.

This mix is also great with scrambled eggs. Just add the eggs after bacon is done and sprinkle cheese when eggs are done. Or with mashed potatoes. Just cook the mashed potatoes and add the bacon and cheese.
