SCOTT AND WHITE OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. firmly packed brown sugar
1 tbsp. baking powder
1/2 tsp. salt
3/4 c. skim or whole milk
2 egg whites, beaten, or 1/2 c. egg substitute
1/4 c. honey or molasses
2 tbsp. vegetable oil
1/4 c. chopped nuts; optional
1/4 c. raisins; optional

Heat oven to 425 degrees. Grease bottoms only of 12 size medium muffin cups or line with paper baking cups. Combine dry ingredients. Add milk, eggs, honey, and oil. Mix just until dry ingredients are moistened. Stir in nuts and raisins. Fill prepared cups 3/4 full. Bake 15-17 minutes or until golden brown.

Yield 1 dozen. Calories 110 per muffin.
