CURRY CHICKEN DIVAN 
3 whole chicken breasts
1 lg. carrot, sliced
1 sm. onion, chopped
1 tsp. salt
1 (10 oz.) pkg. frozen broccoli, cooked
1 (10 oz.) can cream of chicken soup
2/3 c. mayonnaise
1/2 c. evaporated milk
1/2 c. grated cheddar cheese
1/2 tsp. curry powder
1 tbsp. butter
1/2 c. dried bread crumbs

Place first 4 ingredients in large kettle. Cover with water and cook 45 minutes. Then cool and remove skin and bones and cut into chunks. Cut up broccoli in large casserole dish. Combine chicken soup and mayonnaise in broccoli. Combine evaporated milk, cheddar cheese, and curry powder and mix with chicken. Mix butter and bread crumbs; sprinkle over dish. Bake at 350 degrees for 30 minutes.
