BARBECUED PORK STEAKS | |
2 c. vinegar 1 stick butter 1 tbsp. Worcestershire sauce 2 tbsp. red hot sauce 2 tbsp. brown sugar 4 tbsp. catsup Juice of 1/2 lemon 1 tsp. salt 1/2 tsp. pepper 3 lbs. Boston Butt steaks, 1/2 inch thick Mix first 9 ingredients in a saucepan. Simmer over medium heat for 5 minutes. Place steaks on grill over medium or low coals. Sear on both sides. Begin basting steaks. Baste and turn steaks every 10 minutes. Keep lid closed during cooking. Cook approximately 45 minutes. My grandfather "Pop Steve" is the kind of guy who can do anything! A welder by trade and a naturalist by choice, he once served us all WILD mushrooms he picked from the swamp. After assuring us he knew which ones were OK to eat, we devoured them. He came up with this barbecue sauce for our annual June cookout, literally by dumping a little bit of this and that together until as he said, "It smells right!" We've been using his "recipe" ever since! I entered a 4-H competition and won 1st prize in the state in Pork Cookery with this recipe. It can be adapted for chicken by adding another stick of butter. |
