LITE ORANGE MOUSSE 
1 envelope unflavored gelatin
1/3 c. sugar
1 tbsp. corn starch
2 c. skim milk
1 egg, separated
1 tsp. grated orange peel
1/4 c. fresh orange juice
1/4 c. instant nonfat dry milk granules
1/4 c. ice water
Additional grated orange peel (optional)

Chill small mixing bowl and beaters in freezer or refrigerator. Combine gelatin, sugar, corn starch, milk, egg yolk, orange peel and juice in 2-quart microwave-safe mixing bowl. Beat until smooth.

Microwave (high) uncovered 5 to 6 minutes or until mixture begins to thicken and boil, stirring once. Chill about 2 1/2 hours or until thickened but not set.

Beat egg white, nonfat dry milk granules and ice water in chilled bowl at high speed until mixture forms stiff peaks. Fold into chilled orange mixture. Carefully pour into 1-quart serving bowl or 8 individual serving dishes. Chill about 2 hours or until set. Garnish with additional grated orange peel, if desired.

Place a few ice cubes in water until water is ice cold. This is important for proper whipping.

Since microwave ovens vary in power, you may need to adjust your cooking time.
