APRICOT ORANGE MOUSSE 
1 sm. pkg. of apricot Jello
1 pt. orange sherbet
1/2 pt. whipping cream, whipped
1 sm. can mandarin orange slices

Dissolve Jello in 1 cup boiling water and stir in orange sherbet until melted. Drain mandarin orange slices well and on to mixture. Place in refrigerator until slightly thickened (about 15 to 20 minutes). Fold in whipped cream and return to refrigerator until set. I save some cream and oranges to decorate the top. Recipe can be easily doubled.

I've made this recipe several times over the last 30 years and everyone really enjoys this dessert because it is light and refreshing, especially afer a large meal. I usually double the recipe beause it goes so fast.
