CHOCOLATE MERINGUES 
3 lg. eggs, at room temperature
Pinch of salt
2 tsp. vanilla
1 c. chopped nuts or Rice Krispies
1/4 tsp. cream of tartar
1/2 c. cocoa
12 tbsp. sugar

Separate eggs. Stir egg whites with cream of tartar and salt; beat until soft peaks form. Gradually add sugar, about 2 tablespoons at a time and beat until firm peaks form. Fold in cocoa and vanilla and fold in nuts. Drop teaspoonsful onto baking sheet lined with brown paper. Bake at 275 degrees until set and dry, about 45 minutes. Store in airtight containers.
