PEANUT BUTTER KISS COOKIES 
1 2/3 c. flour
1/3 c. cornstarch
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 lb. butter, room temperature
1/2 c. peanut butter
1/3 c. confectioners sugar
1/3 c. brown sugar
1 egg (egg beaters)
2 tsp. vanilla
1 (6 oz.) pkg. chocolate candy kisses

Heat oven to 350 degrees. Butter baking sheets. Combine flour, cornstarch, baking powder and soda. Beat the 1/4 pound butter with the peanut butter. Add sugar and beat until fluffy. Beat in egg and vanilla. Gradually beat in dry ingredients. Shape dough into 1 1/4 inch balls. Press a chocolate kiss, flat-side down, into each ball and then press dough up sides of kiss until only point is visible. Put cookies on baking sheets, spacing about 2 inches apart. Bake until lightly browned at the edges and beginning to brown on top, about 10 minutes. Makes about 35 cookies.

Work Time: 40 minutes. Total Time: 1 hour.
