LITTLE PINK MICE 
1 sheet rice paper
2 egg whites
3/4 c. granulated sugar
2/3 c. shredded coconut
1/4 tsp. red food coloring

To decorate: 20 flaked almonds 20 silver balls 10 (3 inch) lengths licorice lace

You will need: Large bowl Rotary hand beater Teaspoon Fork Knife for cutting Board Wire rack Scissors Toothpick Pretty shallow basket or cake board

1. Heat oven to 275 degrees. Place a piece of rice paper on a baking sheet and put to one side. 2. Separate the eggs and put the whites into a large bowl. Beat them until very stiff and fluffy. 3. Add the sugar, coconut and red food coloring. Mix with a fork until evenly blended and colored. 4. Divide the mixture into 10 equal portions. Make each portion into a round shape and put them on a board. Make a tapering point on one end, to be the mouse's nose. 5. Transfer the mice to the rice paper on the baking sheet. Cut the candied cherry into 10 very small pieces and press a small piece firmly on each tapering point to make the noses. Add two silver balls to each one, as eyes, and two flaked almonds as ears. 6. Cook in the bottom of a preheated oven for 45 minutes until pale in color. 7. Remove from oven to wire rack to cool for 15 minutes. 8. Remove mice and paper to wire rack to cool completely. When cold, trim the paper round each mouse with scissors. 9. Make a small hole at the tail end of each mouse with a toothpick and insert a length of licorice lace. 10. To pack as a present you may arrange the mice in a pretty shallow basket or on a silver cake board.
