BANANA RUM-RAISIN CAKE 
1 c. raisins
1/2 c. dark rum
1/3 c. soft butter
1 c. granulated sugar
2 lg. eggs
1 3/4 c. flour
3/4 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. allspice
1/4 tsp. salt
2/3 c. mashed bananas (2 med.)
3 tbsp. milk
3/4 c. chopped nuts
Powdered sugar

Mix raisins with rum. Cover and let stand overnight. Drain, reserving rum. Cream butter and granulated sugar until blended. Add eggs one at a time, beating thoroughly after each until light and fluffy. Mix flour, baking powder, soda, allspice, and salt. Combine bananas, milk and rum.

Add with the dry mixture to creamed mixture. Beat until smooth. Stir in raisins and nuts. Bake in well greased 9 x 5 x 3 inch loaf pan at 350 degrees for 45 minutes or until pick inserted in middle comes out clean. Cool and dust with powdered sugar.
