SHRIMP FRIED RICE | |
1 1/2 to 2 lbs. cooked and drained shrimp 2 1/2 c. cooked rice 1/4 c. butter 2 fresh green onions, chopped 4 eggs, slightly beaten 2 tbsp. soy sauce 1/4 tsp. pepper Salt to taste Melt butter in 10 inch saucepan. Add rice and fry for 5 minutes, stirring. Add shrimp and onions. Cook for 1 minute. Mix eggs with soy sauce, salt and pepper. Pour evenly over rice and shrimp. Using a large spatula, slowly lift and turn eggs, rice, shrimp mixture to fluff rather than scramble. Cook slowly until eggs are done. |
