COCONUT MERINGUES 
2 egg whites
1/8 tsp. cream of tartar
1/4 tsp. salt
1 c. sugar
1 1/2 tsp. vanilla
2 c. flaked coconut

Beat together egg whites, cream of tartar, and salt until foamy. Add sugar a little at a time, beating constantly until sugar dissolves and stiff peaks are formed. Add vanilla and fold in coconut.

Drop by teaspoonfuls on greased cookie sheet. Bake slowly about 20 minutes or until crisp in 300 degree oven. Cool on wire rack.
