OLD FASHIONED CARROT CAKE | |
2 c. flour 2 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1 1/2 c. vegetable oil 3 c. fine grated carrots 4 eggs 1/2 c. walnuts 1 very ripe mashed banana Add all ingredients, one at a time, and beat thoroughly. Pour into greased rectangle pan. Bake 45 minutes or until done at 350 degrees. Cool cake completely before frosting. FROSTING: 1 (8 oz.) pkg. cream cheese 1 box powdered sugar 2 tsp. vanilla 1/2 c. softened butter Soften cream cheese; beat in powdered sugar, vanilla and butter. Beat until all ingredients are mixed well and fluffy. Spread on cake and chill in refrigerator. |
