ISLAND PIE 
1 1/2 c. sugar
3 tbsp. flour
3/4 stick butter, at room temperature
3 eggs
1 c. crushed pineapple, drained
1 c. flaked coconut
1 unbaked 9-inch pie shell

In a mixing bowl, mix sugar and flour. Beat in butter until fluffy; add eggs and beat until well blended. Fold in pineapple and coconut. Pour into pie shell and place on low oven rack in a 500 degree oven for 5 minutes; lower the temperature to 350 degrees and bake until center is just set. This usually takes about 45 minutes. Remove at once and place on a wire rack to cool.

When served, garnish with whipped cream and chopped nuts, if desired.
