JOAN'S POTATOES 
4-8 lg. potatoes, parboiled - when cool slice them, but not too thin
1-1 1/2 sticks butter
1 lb. fresh sliced mushrooms
1 pt. sour cream
1 lg. onion
1 pt. cottage cheese
2 tsp. salt
Dash pepper
2 c. American cheese

Saute mushrooms and onions in butter. Combine cottage cheese, sour cream, salt and pepper to onions and mushroom mixture. Spread 1/2 of potato mixture into a 13 c 9 inch casserole dish. Put potatoes on top. Spread rest of mixture over potatoes. Then sprinkle with cheese. Cover and bake at 350 degrees for 45 minutes. Uncover and bake for 10 more minutes until golden brown on top.
