CRANBERRY-ORANGE BREAD | |
2 c. flour 3/4 c. sugar 1 c. raw cranberries, chopped 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 tbsp. shortening (butter), partially melted Grated rind of 1 orange 3/4 c. orange juice 1 egg, beaten One cup unbleached white flour plus one cup whole wheat flour. 1. Heat oven to 350 degrees. Grease 9"x5" loaf pan. 2. Blend dry ingredients together. Mix in shortening, orange juice, orange rind and beaten egg. 3. Fold in chopped cranberries. 4. Pour into pan. Bake approximately 1 hour at 350 degrees. 5. Cool thoroughly before slicing with a sharp, thin knife. Freezes well. |
