HUANCAINA POTATOES 
4 hard boiled yolks
6 red hot chili peppers
1 1/2 lb. feta cheese or cottage cheese
Lemon juice
Fresh milk & oil
2 1/2 lb. boiled potatoes
Parsley, grated
Garnish:
1 red hot chili pepper
Salt, pepper
4 hard boiled white eggs
Black olives

Remove red hot chile seeds and boil chiles at least 3 times in water with a teaspoon of sugar. Blend with yolks, cheese, milk, lemon and oil thoroughly until get a medium heavy sauce.

Presentation: In a large pan, place peeled potatoes (halves), cover with sauce. On top as garnish rounded white eggs pieces, parsley and pepper. Lettuce leaves and olives as decoration.
