BAGELS 
1 pkg. yeast
1 c. warm water
4 c. flour
2 tbsp. sugar
2 tbsp. oil
1 1/2 tsp. salt
2 eggs
2 qts. water
1 1/2 tbsp. sugar
1 egg yolk in 1 tbsp. water

Dissolve yeast in the warm water. Add 1 1/4 cups of the flour, sugar, oil, salt and eggs. Beat until smooth. Add the rest of the flour, turn out and knead until smooth. Let it rise in a greased bowl until double in bulk. Divide into 16 parts, shape and punch a hole in the center of each, let rise for 20 minutes.

Heat the 2 quarts water and 1 1/2 tablespoons sugar to boiling. Add 4 bagels at a time and simmer uncovered 2 minutes on each side. Drain on a towel. Beat egg yolk and water and brush the top of each bagel with the egg mixture. Bake on a greased cookie sheet at 375 degrees for 30 minutes or until brown. (145 calories)
