BEST WHITE FRUIT CAKE | |
6 lg. eggs 1/2 lb. butter 1 c. sugar 1 1/2 c. flour 1/2 tsp. baking powder 1 lb. glazed cherries 1 lb. glazed pineapple 5 c. shelled pecans 1/2 oz. or 1 tbsp. vanilla 1/2 oz. or tbsp. lemon extract Cream butter. Add sugar gradually, creaming well until fluffy. Add eggs, which have been beaten well with rotary beater and blend. Chop nuts and fruits and mix with 1/2 cup flour. Sift flour and baking powder together and fold into butter and egg mixture. Add flavorings and mix well. Then fold in nuts and fruits. Pour into greased paper lined tube pans. Place in cold oven and bake at 250 degrees for 2 1/2 to 3 hours. |
