MICROWAVE POLENTA 
In covered 2 1/2-quart bowl boil 6 cups water. Take out and add 2 cups cold water, 2 cups cornmeal, and 2 teaspoons salt. Cook for 5 minutes and stir. Cook for 2 minutes more and stir. Add butter and/or cheese and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
