POLENTA AND TOMATO 
This quick and easy polenta also makes a good side dish for simple roast meats and chicken.

3/4 c. yellow cornmeal
3 c. water
1 1/2 tsp. salt
1 1/2 c. diced zucchini (8 oz.)
1/2 c. finely chopped onion
1 c. whole kernel corn
1 pkg. (3 oz.) cream cheese
1 c. chopped tomato (1 med. size)

1. Mix cornmeal and water in a 3 quart microwave-safe bowl or deep casserole. Cover with lid or vented plastic wrap and microwave on high 6-7 minutes. Stir until smooth.

2. Stir in salt, zucchini, onion and corn. Cover and microwave on high 4-5 minutes until vegetables are almost tender.

3. Stir in cheese and tomato. Microwave on high 2-3 minutes until cheese melts and vegetables are tender. Makes 6 cups, 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
