POTATO BALLS 
Instant mashed potato mix
1/2 c. sour cream
1/2 tsp. oregano
1 tbsp. grated Parmesan cheese
1/4 c. bread crumbs
2 tbsp. oil (opt.)

Prepare instant potato mix as directed for 4 servings, substituting sour cream for the milk and butter. Stir in oregano and Parmesan cheese. Chill 20 minutes. Shape potatoes into 8 balls and coat with bread crumbs. Place on a cookie sheet. Drizzle with oil. Bake in preheated 375 degree oven for 10 to 15 minutes.
