MIXED VEGETABLE CASSEROLE | |
2 (10 oz.) pkg. frozen mixed vegetables 1/2 c. (2 oz.) shredded low-fat American cheese 1 (8 oz.) can sliced water chestnuts, drained 2 tbsp. chopped onion 2 tbsp. low cal mayonnaise Vegetable cooking spray Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat health. Cook vegetables according to package directions, omitting salt and fat. Drain. Combine vegetables, cheese, water chestnuts, onion and mayonnaise, stirring gently. Spoon into a 1 1/2 quart casserole coated with cooking spray. Bake at 350 degrees for 20 minutes. Serving amount 1/2 cup. Exchanges 1 starch. Cholesterol 4 mg. Calories 79. Carbohydrates 12 gm. Protein 4 gm. Fat 1 gm. Fiber 1 gm. Sodium 177 mg. |
