CHEESY VEGETABLE CASSEROLE 
2 (10 oz.) pkgs. frozen, mixed vegetables, cooked according to directions and drained well
1 c. celery, chopped
1/3 c. onion, chopped
1 c. mayonnaise
1/2 c. sharp cheese, shredded
1/4 tsp. salt
1/8 tsp. pepper

Combine above ingredients and spoon into a greased 2-quart casserole. Cover with this topping: 2 c. Cheddar cheese crackers, crushed 1/2 c. sharp cheese, shredded

Bake at 325 degrees for 30 to 40 minutes. Yield: 8 to 10 servings.
