CARROT TEA BREAD 
3 eggs
1 1/2 c. sugar
3/4 c. oil
2 3/4 c. sifted flour
1 3/4 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 c. finely shredded carrots
Powdered sugar (opt.)

Grease 9 x 5 x 3 inch loaf pan. Line bottom with wax paper; grease. Beat eggs, sugar and oil in bowl with rotary beater. Sift flour, baking powder and soda, salt and cinnamon on wax paper. Stir into egg mixture. Stir in carrots. Turn into prepared pan. Bake at 325 degrees for 1 hour 20 minutes. Cool 10 minutes in pan; remove from pan, peel off wax paper and cool completely. Sprinkle top with powdered sugar if desired. Bread will freeze.
