MME. STEPHANIE'S FAVORITE SALAD 
8 c. mixed torn lettuces, washed and dried, room temperature (try to get or grow arugula)
3 lg. cubed ripe tomatoes, skin on
1 tbsp. chopped fresh garlic
4 tbsp. chopped fresh herbs (oregano, basil, parsley, etc.)
1/4 c. virgin olive oil
1 c. cubed Provolone or Mozzarella cheese
Toasted croutons (if desired)

Mound greens onto individual salad plates. Place all other ingredients, except croutons, into a bowl and toss. Microwave until cheese melts but do not collapse tomatoes. Pour steaming mixture over greens. Top with croutons. Serve immediately. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
