ONE OF A KIND PORK PIE
CRUST:

1 c. shortening
1 tsp. salt
3 c. wheat flour
2/3 c. water

Cut half the shortening into salted flour, then add remaining 1/2 cup shortening. Mix well and stir in water. Roll out, enough pastry for one 10 inch two crust pie.

FILLING:

1 1/2 lbs. ground pork
1 1/2 lbs. ground beef
1 1/2 lbs. ground turkey
1 med. onion, chopped
4 c. mashed potatoes
1 tsp. poultry seasoning
1/2 tsp. cinnamon
1/2 tsp. nutmeg
Salt and pepper to taste

In a large skillet, brown ground pork, then ground beef, then ground turkey. Drain excess fat. Combine meats, onion, seasonings, salt and pepper together; after doing all this, cook again slowly for 1/2 hour. Add mashed potatoes to meat and stir together. Place in pastry lined pie plate and top with remaining pastry. Cut a few slits on top crust to allow steam to escape.

Make a mixture of egg and water, brush on top crust for a golden glaze. Bake in 350 degree oven for 20 or 30 minutes or until pie is golden. When pie is done you may have found yourself with leftover filling, freeze and reheat; it makes a great side dish on those nights you don't know what to have.
