CARROT CAKE WITH CREAM CHEESE FROSTING | |
2 1/4 c. flour 2 1/2 tsp. cinnamon 1 1/2 tsp. baking soda 1 tsp. salt 4 eggs 2 c. sugar 1 1/2 c. grated carrot 1 1/2 c. oil Mix flour, cinnamon, soda and salt; set aside. in large mixer bowl, beat eggs with sugar until fluffy. Add carrots and oil; mix well. Add flour mixture and stir well. Pour into greased 13 x 9 x 2 inch pan and bake at 350 degrees for 45 minutes. CREAM CHEESE FROSTING: 3 oz. soften cream cheese 1/4 c. softened butter 2 1/4 c. confectioner's sugar Beat until spreading consistency. Frost cake. |
