BEEF AND VEGETABLE STEW (Easy) 
6 tbsp. oil
3 lbs. beef chunks
1 c. chopped onions
1 c. chopped green peppers
1 c. sliced celery
2 tbsp. parsley
1 clove garlic, chopped
1 can (8 oz.) tomato sauce
2 beef bouillon
1 1/2 tbsp. salt
1/4 tsp. pepper
1/8 tsp. thyme
6 potatoes
6 carrots
6 onions
1 tbsp. flour
2 c. water

1. In hot oil, brown beef, onions, garlic, celery and green peppers.

2. Add parsley, tomato sauce, bouillon, salt, pepper, thyme and 2 cups water.

3. Bring to boil. Reduce heat and simmer 1 1/2 hours covered.

4. Add vegetables - simmer 1 hour longer.

5. Remove. Mix flour and 2 tbsp. water. Stir in to thicken, simmer a little longer, 10 minutes.
