MOCK LASAGNA 
1/2 lb. broad noodles
1 tbsp. butter
1 lb. ground beef
2 (8 oz.) cans tomato sauce
Salt and pepper to taste
1 c. cottage cheese
8 oz. pkg. cream cheese
1/4 c. sour cream
1/3 c. minced onion
1 tbsp. minced green pepper

Cook and drain noodles. Saute meat in butter; stir in tomato sauce and cool. combine remaining ingredients.

In a 10-12 inch casserole (square or oblong), spread half of the cooked noodles; cover with cheese mix and top with the rest of the noodles. Pour meat mix on top. Bake for 45 minutes at 375 degrees.

This amount will generously serve 6 to 8. It freezes well and is just as delicious when reheated. I usually add a little more cottage cheese and sour cream than the recipe states.
