CHICKEN AND RICE CASSEROLE 
1 (4 oz.) can mushrooms
1 can cream of chicken soup
1/2 c. fat free chicken broth
1 c. diced, cooked chicken
1/2 c. long grain rice

Combine mushrooms, soup (undiluted) and broth; cook and stir over low heat until smooth and bubbling. Stir in chicken and uncooked rice. Cover. Bake at 325 degrees for 45 minutes. 3/4 cup = 1 serving, 1 bread, 1 milk, 1 lean meat, 1 fat exchange for diabetics.
