CUCUMBER RELISH 
10 c. ground cucumbers (green or ripe)
2 c. ground carrots
4 lg. onions, ground

Mix ground vegetables together. Sprinkle with 1/4 cup pickling salt - let stand at least 4 hours. Drain off juice - rinse with clear water - drain well.

Mix with the following:

3 c. sugar
3 c. vinegar
1 1/2 tbsp. mustard seed
1 tbsp. celery seed
2 red peppers
2 green peppers

Cook for 20 minutes. Seal hot.
