OATMEAL COOKIES 
2 1/2 sticks butter
3/4 c. firmly packed brown sugar
1/2 c. granulated sugar
1 egg
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. Quaker Oats
1 c. raisins (opt.)

Heat oven to 375 degrees. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, salt and cinnamon; mix well. Stir in oats. Stir in raisins. Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake exactly 8 minutes.
