OATMEAL COOKIES | |
2 1/2 sticks butter 3/4 c. firmly packed brown sugar 1/2 c. granulated sugar 1 egg 1 tsp. vanilla 1 1/2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. nutmeg 3 cups Quaker Oats (quick or old fashioned, uncooked) raisins, if desired Beat butter and sugars until fluffy. Beat in egg and vanilla. Add flour, baking soda, salt and spices. Mix well. Stir in oats and, if wanted, raisins. Drop by rounded tablespoons onto ungreased cookie sheet. Bake at 375 degrees 8 to 9 minutes for a chewy cookie, 10 to 11 minutes, for a crisp cookie. Cool 1 minute on cookie sheet. Remove to wire rack. Store tightly covered. Makes 4 1/2 dozen. |
