LYDIA'S CORN SALAD 
2 (10 oz.) pkgs. frozen corn
1 med. red onion, chopped
2 tbsp. red wine vinegar
Salt and pepper to taste
1 tomato, peeled, seeded and diced
4 slices bacon, cooked and crumbled
Chopped green onion
1 tbsp. chopped parsley
1/4 c. sour cream
1/4 c. beef broth
1/2 c. mayonnaise

Mix corn, onion, green pepper and parsley in small bowl. Whisk together sour cream, broth and vinegar. Blend in mayonnaise and beat until light. Toss cream. Mix salt and pepper with vegetable mixture. Chill.
