CHICKEN BREASTS IN MANY MUSTARDS 
4 half breasts of chicken, boned and skinned
Mustard Marinade (see below)

To prepare chicken: Marinate 2 to 4 hours. To grill: Open an open grill over medium-hot coals. Cook the chicken 6 to 7 minutes per side. Spoon the marinade over the grilled chicken as a sauce if desired.

Serve over grilled apple slices.

To prepare the apples: Wash, core, and cut the apples into 1/4 inch slices. Rub with walnut oil and sprinkle with vinegar. To grill: Cook apples over coals until tender, about 3 minutes per side. Serve each grilled chicken breast over 2-3 slices.

MUSTARD MARINADE:

2 cups 1/4 c. whole seed mustard (Old Style) 1/4 c. hot German mustard 1/4 c. distilled white vinegar 1/4 c. olive oil 1/2 c. apple juice (preferably unsweetened) Juice of 1/2 lemon 1 whole shallot, sliced into rings Freshly ground pepper

Combine all ingredients in a bowl. Whisk to emulsify. Marinate chicken 1 to 3 hours before grilling.
