CHICKEN SQUARES 
3 c. boned chicken, diced
1 c. cooked rice
2 c. soft bread crumbs
1/3 c. finely diced celery
1/4 c. diced pimento
4 beaten eggs
1/4 tsp. poultry seasoning
2 c. chicken broth

Grease or butter baking dish. Place 1/2 of crumbs in bottom of dish. Mix chicken, rice, celery, and pimento (you may add parsley, etc.). Put on top of crumbs. Mix beaten eggs and broth with poultry seasoning (salt and pepper if you want it). Pour over chicken, etc., cover with crumbs. Dot with butter. Bake 55 minutes or 1 hour at 350 degrees.

Sauce:

Mushroom soup

Slightly dilute with chicken broth. Serves 8 to 10.
