BAKED BEEF BRISKET 
4 lbs. beef brisket
1 c. ketchup
1 c. water
Approximately 1/2 lg. chopped onion
2 tbsp. vinegar
1 tbsp. prepared mustard
1/4 tsp. pepper
2 tsp. salt

Trim excess fat from brisket. Combine ketchup, water, onion, vinegar, mustard, and pepper. Pour over beef, cover, and marinate overnight. When ready to cook, sprinkle with salt. Cover. Bake in slow oven (300 degrees) four hours or until tender. Skim fat from sauce in pan. Serve sauce with beef. Serves 6 to 8.
